Lemon & Dill Fish with Roasted Vegetables
I'm back with the best Lemon & Dill Fish with Roasted Vegetables that you can make. It is a warm, wonderful meal to serve your family. My husband ate the leftovers for lunch the next day!
Ingredients I used:
1 Lg sweet potato, peeled
5 Lg carrots, peeled
1 Lg red onion, chopped
3 sweet peppers, chopped
1 pint grape tomatoes
1 bag Brussel sprouts, halved
Drizzle about 2 Tbs olive oil over vegetables
Top with a few lemon slices and add some herbs.
Herbs I used: Lemon or reg. Thyme, Rosemary and Dill Weed.
Oven at 415 F on Convection Broil for 15 minutes, tossing veggies once during broil.
Oven switched to Convection Bake, add seasoned fish and bake for 18 minutes more, adding time if needed. Don't forget to season fillets and top with more lemon slices and dill weed.
Bake fish until it reaches 140-145 degrees F.
Enjoy! Janie

Building the New Homestead-- Day 1: Marking Drive and Hazard Spots

Day one and we mark all hazard spots to keep crews and city officials safe from falling in holes from old fence posts, also this tells the dig crew where I need a bucket of dirt dropped. Marking drive lets County officials see where we plan to enter the drive off the country roadway. There used to be a drive and old house here, so that made it pass highway and city officials quicker. Just a tip...

    Janie, I just was telling my husband a few weeks back that I hadn't seen one of your videos in a while and he said that I had mentioned that before to him a few months ago when I had him buy a big huge bag of long grain rice. Your videos just stopped coming up on my recommendations, and then all of a sudden today, there was your dry canning video, so I clicked on your channel name so that I could save it to my special file. I'll be glad to go through and see what I have missed over I think nearly three years or more. Glad to have you back. May God always Bless the two of you and your family with good health, safety, and prosperity in all you do. ~SuzyJC-in-Central-Southeastern-Ohio_10.18.2023~

    • @OurLittleHomestead
      @OurLittleHomestead 10 місяців тому

      When I tighten my lids, I tighten till you feel the gum give and then stop moving on glass rim...then I give an addition 1/4" turn. Works for me every time. No liquid loss and I never let sit in a dropped locked canner for more than five minutes.

    I have a question about rings. Due to availability of jars , I started using regular mouth jars and lids. That said, I have found that regular mouth lids and rings are not as dependable as the large mouth. The rings seem to not move smoothly when putting on the jar. When that happens, the ring will not come off without breaking the seal of the jar. Do you have any pointers for that situation?

    • @OurLittleHomestead
      @OurLittleHomestead 10 місяців тому

      Sounds like you are putting your rings on too tight. When process is done and lid has sealed down. Most my rings are loose...reg or wide size rings. I've never had no stick so tight they've pulled off a lid. Try tightening just until you feel the gum on the glass rim come to a stop and see if that helps your situation.
